Chenet Merlot - 2007
Grape variety: 100 % Merlot which makes very typical
and highly aromatic wine. This is originally from
Bordeaux, but it has adjusted very well to southern
France (over 68,000 hectares).
Origin: The vineyards of Vin de Pays d'Oc can be
found everywhere in Languedoc-Roussillon, extending
from the south of Côtes du Rhône to Carcassonne.
Soil: Varied over the whole producing area : this
vatful has been especially selected on clay-chalky
and stony soils.
Vinification: The grapes are harvested when just
ripe, destemmed, crushed and fermented for 6 -
12 days. The fermentation temperature is kept below
32° C and the wine is gently pressed. The best
vintages have been Maturing in tanks. Lastly, the
wine is racked, filtered and bottled. Characteristics:
- Colour: Clear, very intense, garnet red to
purple.
- Nose: Red fruit, blackcurrants, cherries, raspberry
jam.
- Palate: Wine with velvet tannins, fine long
taste.
Recommendations: Red wine that may be served
with white meat, poultry, grilled meat, salad
and many types of cheese.
Chenet Cabernet Syrah – 2007
Grape variety(ies): Blend of Cabernet Sauvignon
(70%) and Syrah ( 30% ) , which makes it very
typical.
Origin: Vin de Pays d'Oc vineyards, southern
France, in Languedoc-Roussillon.
Soil: Varied over the whole producing area Oc
area wine : there are sandy,clay-chalky and schistous
soils.
Vinification: The grapes are harvested when ripe,
destemmed, crushed and then fermented for 6 to
12 hours at a controlled temperature (about 30°
C) and pressed gently. The wine is matured in
stainless steel tanks to conserve the rich aromas.
Characteristics:
- Colour: Ruby red, intense and clear.
- Nose: Notes of cherry, blackcurrant, green
peppers, liquorice and spices.
- Palate: Round and pleasant wine with powerful
aromas.
Recommendations: Red wine that can be served
with a large number of dishes : red meat,cold
meats, salad and many types of cheese.
Chenet Blanc de Blanc - 2006
Grape variety(ies): 70% Colombard, 30% Chardonnay
Origin: Côtes de Gascogne vineyards. At the foot
of the Pyrenees (south-western France).
Soil: Undulating area, with mostly clay-chalky
soils.
Vinification: The grapes are harvested before
they are ripe for perfect health and then crushed
rapidly at a low temperature. Fermented at a
very low temperature (12 - 17° C) to preserve
all the aromas. Rapidly fined and conserved at
a low temperature.
Characteristics:
- Colour: Clear and brilliant, very pale yellow
with green lights.
- Nose: Notes of white pears, peaches, pineapples
and vanilla.
- Palate: Dry wine, fine and full, finely balanced.
Recommendations: Fine wine that is ideal with
fish and seafood. It may also be served as an
aperitif and in wine bars.
